Harvesting is precisely timed, beginning only when each olive variety reaches its optimal ripeness. Every fruit is picked with care, handled gently to preserve its integrity and delicate character.

Within hours of harvest, the carefully selected olives are brought to a local mill, minimizing any stress to the fruit. Using modern facilities and cold-extraction methods, every stage of processing is designed to preserve the olives’ aroma, color, and full organoleptic profile. This approach produces an extra virgin olive oil of exceptional quality, perfectly reflecting both the fruit’s character and the uniqueness of its land of origin.

Sustainability guides every step of the process, from field to bottle. That’s why we chose bottles from Vetreria Etrusca, made from recycled glass and designed to protect the oil while minimizing environmental impact.
